Pasta, pizza and ice cream are all well and good, but I found there just weren’t enough eggs in Italy for my liking. To rectify this, I decided to have an eggstravaganza when I got home. The recipe is very simple and the results were mouthwatering. My meal consisted of:
  • 4 devilled eggs
  • 1 fried egg
  • 1 poached egg
  • 1 scrabbled egg
  • A jacket potato with egg mayonnaise, ham and sweetcorn
  • A ham and sweet corn omelette

I have to say that it was absolutely delicious, although I did feel slightly bloated afterwards and now seem to have developed a devilled egg dependency.
